Texas Caviar Recipe
Mix all of the following ingredients together in a large bowl:
One 15.5 ounce can of black eyed peas rinsed and drained
One 15.5 ounce can of black beans rinsed and drained
1 can shoepeg corn or yellow corn rinsed and drained
1/2 cup chopped jalapeno peppers –jar or canned
1 cup chopped celery
1 cup red onion chopped
½ cup sweet roasted red pepper – chopped from jar
Heat the following ingredients until sugar is melted:
½ cup olive oil
½ cup white/granulated sugar
2 oz. cider vinegar
Add heated mixture to bean mixture and chill for at least 2 hours – better if you chill overnight.
Strain off the oil before serving.
Serve with tortilla chips or crackers
